The defining element, mutton soup, was luscious and not too heavy herbal taste, somewhat greasy yet easy on the palate. Chopped chinese celery and sliced ginger were added as garnish as well as to nullify any lingering gamey flavour. Intense yet mellow, it assault the senses with effusive and complex perfumed fragrance.
Conclusion
Both stalls' soup were almost on a similar level, with subtly sweet and deep herbal mutton goodness. Mutton chunks were slightly more at Hong Wen compared to 老吴記. Our preference leans slightly more towards Hong Wen Mutton soup for its slightly better mutton meat, and slightly denser soup with a more lingering aftertaste.
